Mexican Quickie Tasty High Protein Quick Assembly Soup

Came home hungry. Nibbled while this cooked. It took about 45 minutes for the flavors to meld. It's very tasty!


1qt chicken broth (I make my own on a regular basis but you can cheat with one of those supermarket broths)
1 leftover chicken breast shredded - or you could just cut up a piece of chicken and throw it in

1 can white or black beans
1 can diced tomato with green chiles
1can vacuum pack corn. (You could use the one with diced peppers for even more color if you want.)
handful of edamame (that's optional but they increase the protein and other nutrients-plus it adds some nice bright green color - you could use peas if you prefer although they would add more sweetness)
1 cup or so shredded cabbage 
half of an adobo pepper plus some of the sauce  (or chili powder)
creme fraiche or sour cream (optional but tasty especially the creme fraiche)



Dump it all together and cook uncovered so that it cooks down a little - about 45 minutes or so - I like my soup to be soup, not stew - cook it longer if that's the consistency you prefer. I didn't add any salt because canned tomatoes add enough salt for me.


Ladle the soup into your bowl. Top with a dollop of creme fraiche or sour cream. Tasty and satisfying on a cold rainy day like today.
